Herb Roasted Vegetables
Easy Herb Roasted Vegetables(allergen friendly, gluten friendly, fodmap friendly, and vegan)
These savory roasted vegetables is the perfect side dish that will help to bring balanced flavors to your meal.
1 lb red skinned potatoes, scrubbed and cubed
1 lb small carrots, scrubbed and cut into bite size pieces
1 lb zucchini, washed and cut into bit size pieces
2 tbsp olive oil
2 tsps IrieVeda Old World Roast
½ tsp sea salt
Preheat oven to 400 degrees.
Combine all clean and cut vegetables into a bowl.
In a separate small dish, combine oil, Old World Roast and salt.
Add spice mixture to vegetables and stir to distribute evenly.
Spread vegetables onto a baking sheet. Roast for 20-25 minutes
