Gingerbread-Spiced Rice Pudding with Poached Apples

Ingredients

    • ½ cup Jasmine Rice (or use brown rice or certified GF oats)

    • 1 ½ cups water

    • 1 cup unsweetened oat milk

    • 1 tbsp maple syrup

    • 1 tsp IrieVeda Jolly Gingerbread spice blend

    • Pinch of salt

    • 1 medium apple, peeled and thinly sliced

    • ¼ cup water

    • ½ tsp IrieVeda Jolly Gingerbread spice blend

    • 1 tsp maple syrup

    • ½ tsp lemon juice

    Directions

      1. Rinse rice in a fine mesh strainer.

      2. In a small saucepan, combine rice, water, and salt. Bring to a boil, then reduce heat and simmer for 10 minutes, stirring occasionally.

      3. Add milk and continue cooking another 10 minutes until thickened, stirring to prevent sticking.

      4. Stir in maple syrup and Jolly Gingerbread blend. Adjust sweetness to taste.

      1. In a small pan, add sliced apples, water, maple syrup, lemon juice, and Jolly Gingerbread blend.

      2. Cover and simmer on low for 8–10 minutes or until tender.
