Alba cinnamon is the highest grade of cinnamon available from Sri Lanka and comes from the thin inner bark of the Ceylon cinnamon tree. The thin layers of bark are hand rolled and then dried in the sun. Ceylon cinnamon is safe to consume daily unlike other varieties that have the potential to damage your liver. It is light brown in color with soft layers and a sweet spicy flavor. The sticks can be used in teas, to make ciders or in savory dishes. It is also easily ground to use in baked desserts.
